Why are we open limited days and not 6 or 7 days a week?
Given the size of our bakery, the long hours associated with producing our sourdough breads and pastries, and the seasonality of Cape Cod, it is not practical for us to be open everyday of the week throughout the year. Instead, our business model is to open on days of the week that are able to meet high demand for our breads, pastries, and coffee. We use the early part of the week for prep work, equipment maintenance and cleaning, ordering ingredients, and the business tasks needed to run a bakery. Monday is off for all our staff.
As an artisanal bakery, we bake everything from scratch in small batches to be sold that very day. We do not believe in taking shortcuts. Preparing exceptional sourdough breads and pastries takes hard work, long hours, and attention to detail- we are committed to the highest quality products for our customers. Did you know that our croissants take 3.5 days from start to finish? Our slow rise sourdough breads undergo over 30 hrs of fermentation before being bake.
